Fried Quinoa

Hello foodies,

Lately, I've been craving Nigerian fried rice, then I had a lightbulb moment. Why not make a healthier alternative using one of my new favs, Quinoa. Quinoa is a plant-based source of protein and a good alternative of other grains. It has a high fibre content which makes it very nutritional and it's also quite yummy!
So here it goes x

Ingredients

200g quinoa
1 small onion
A handful of mixed red peppers 
1 small carrot (chopped) 
Salt to taste 
1 tbsp Garlic powder 
1 tsp Ginger 
1 tbsp Curry powder
2 tsp Dry pepper 
2 Bouillon cubes (Maggi)
2 tbsp Olive oil 

Directions 

1. Place the quinoa in a pot and rinse several times with cold water to remove the bitter taste.
2. Add 2 cups boiling water into the same pot and place on high heat to boil for 15 minutes (or until the quinoa has soaked up all the water). Once this is finished put aside.
3. Place a frying pan on medium heat, add in the olive oil and heat slightly. Add the in onions in first  then the rest of the ingredients and stir. Cook for 2 minutes.
4. Add the precooked quinoa and mix it all together. Taste and adjust for seasoning if necessary. Cook for another minute.
5. Serve and Enjoy!!!

What's in my fridge?

Hello foodies,

So I wanted to give you guys a peek into my fridge so you can see what I eat regularly. This is a list of the 5 things that are always in my fridge, so shall we;

1. As a Nigerian girl, the thing that must always be in the fridge (or freezer) is STEW.  It is the most convenient thing to have in the fridge especially for those long days when you get home and are too tired to cook, you can just quickly make some rice, pasta or bulgur wheat. 

2. Next on my list is PEANUT BUTTER,  I love this stuff and I opted for the healthiest possible version, it's 100% peanuts, no added salt or palm oil. It sounds disgusting i know but it tastes better than i expected. This is perfect for late night snacks, you can pair this with an apple or for the less open-minded people, a slice of brown(or seeded) bread.


3. I always have CARROTS AND BROCCOLI already boiled and ready to eat. As part of my fit fam I try to eat a lot of vegetables and this is easy to do when they're already made and in your fridge.

4. Next item on my list is HOISIN SAUCE. This sauce is multi-purpose and it goes with everything, fries, chicken nuggets, spring roll, cucumber and many more things. You can also use this sauce to make stir fry noodles or rice.

5. Last but not least is WINE, My favourite brand for wine is Echo Falls I especially love their fruit fusions. This is perfect for when you've had a long day at uni(or work!) and just want to unwind.

Hi fellow foodies and welcome to my blog.

I am Keji Adewole, student, future accountant/entrepreneur and food enthusiast. I love to cook and eat, so I decided to share that with the world. I am Nigerian (born and bred!) and learnt how to cook from watching my mum and also from a series of trial and error. To be very honest I'm still learning, and I want you to learn with me.

I will be focusing mostly on finding healthier alternatives of my favourite foods especially Nigerian food but also occasionally experimenting with foods from other parts of the world.
